Update

I cooked this week for Thursday night din-din. Vegetarian Times has a stuffed pepper recipe that I was interested in trying. Instead of rice, it called for quinoa.  I was exposed to quinoa recently when Missy and Bob had us over for dinner. Quinoa is a South American grain and is a good source of fiber and protein.  The recipe called for red peppers and I used half red, half green because Martin's did not have a good selection of red. It called for cumin and a variety of veggies and black beans and would have been better had I not forgotten the salt and pepper...oops.  Nothing that couldn't be fixed.  I thought it was pretty good though so hit me up for the recipe if you are interested.

Kenny made dessert this week, a delicious lemon cheese cake. It puffed up when he baked it but it tasted amazing. Thanks Kenny!

Friday after work I went running outside for the first time since probably October. It was warm and beautiful and it felt great. I had a great mix on the shuffle and ran 4 miles like it was nothing. I am over winter and am ready for sun and fun.  Matt and I had a great dinner at Los Toltecos which is now my new favorite mexican restaurant. We ran into Jordan and Lou briefly and Jordan looks great! Meighan came over afterwards and we discussed possible interview questions for her SUPT interview the next morning. 

I worked Saturday. It was a busy but productive day and I left work feeling like I had accomplished quite a bit. Saturday night Matt worked but Meighan came over for a little while and we chatted about her interview and life and enjoyed a nice glass of wine. From what Meighan said, it seems like things went really well and she will hear this week about whether she is being admitted.  I have my fingers and toes crossed Meighan! She will be a great therapist and her patients will be so lucky to benefit from her skills and wonderful disposition. 

Sunday, Matt and I slept in. It felt great. We had a great breakfast and watched an interesting documentary, Religulous with Bill Maher. We wanted do something active outside like tennis but Matt's knee has been bothering him so I ended up taking a restful nap instead. We had Winchester Tai for dinner and it was delicious as usual. 

This week, I really need to read my book for book club which I am hosting next Monday. We are discussing Eat, Pray, Love. I thought the club had already read this book but they have not. I am excited to read it and I need to get on it. I guess next weekend is going to be filled with cleaning and cooking. I'm thinking of making veggie chili for the ladies.  Yummy!
