Update

The Dodgers are in first place in National League West. Oh Yeah! Really want to see the boys in the playoffs. Hope we continue winning and Arizona loses.

Two Thursdays ago I was a little ambitious with the menu. I planned a asparagus sweet potato bisque, roasted red pepper bread salad and a lemon cream angel hair pasta. I had nothing prepped and I didn't shop until the day of so needless to say, it was pretty late before we ate. I thought everything was really good.  It was my first go at soup and I really liked it. Matt really liked the bread salad.  Unfortunately, everything was so hectic that I didn't get any good pictures of dinner. Mel made a great peach crisp, so yummy.

Last Thursday, I tried out one of the recipes from Vegetarian Times. Double coriander eggplant tagine. The dish was served with a yogurt mint sauce. It is a moroccan dish and had potential to be really good but it didn't turn out quite like I expected. The recipe called for 12 baby eggplants and the store didn't have them so I used a regular eggplant. Let's just put it like this, it was ALOT of eggplant. The flavors were good but I think it would have tasted better with different types of vegetables combined with the eggplant.

This past sunday Matt and I ran 18 miles. It was not easy. At mile 17, I started crying and moaning and Matt was a little worried. We finished the run, I hopped into the shower then crawled directly into bed where I slept for 3 hours. We burnt 2400 calories so we had a huge calzone for lunch. It was a really great day. Once I woke up I felt great besides being a little sore. Monday, my foot started hurting me. I am paranoid about getting a stress fracture. I've taken 3 days off but I am going to run tomorrow and see how it feels.

Sky on fire

Monday night was book club. I hosted this week at The Dancing Goat.  I was not impressed by the food but the wine was great and as usual the conversation was stimulating. The conversation centered on the election but we also discussed religion, community and our philosophies in life. The book we discussed was "This I Believe." It is a compilation of many personal philosophies. They discussed religion, lack of religion, politics, kindness, positivity, etc. There are many chapters in which everyone could potentially relate or be inspired by. The next book is "Looking Through Windows," by Caren Werlinger.  She is a local PT who owns PERC fitness. She is a guest lecturer at SU and I'm excited to read a book written by someone I know.

This weekend is another 18 mile run (hopefully I'll be feeling better).  I also work Sunday. Hope everyone is well.
